Swedish Kringle Recipe

A recipe for Swedish Kringle, also known as "Danish Puff Pastry."

Pastry layer:

1/2 cup butter
1 cup flour
2 tablespoons cold water

Top layer:

1/2 cup butter
1 cup water
1 cup flour

Icing:

1 cup powdered sugar
1 tablespoons butter
1 tablespoon hot water
1/2 teaspoon almond extract

Method:

Step 1. Mix together, cutting butter into flour as you would for any pastry. Add cold water and mix lightly until dough holds together in a ball. Divide in 2 parts. Pat each half out into a 2 inches by 3 inches wide and 12 to 15 inches long piece on a cookie sheet. Set aside.

Step 2. Bring water and butter to boil, add flour all at once (as you do for cream puffs). Stir until dough leaves sides of pan and forms a ball. Add 3 eggs, one at a time, beating well after each. Add 1/2 teaspoon almond extract. Spread equal amounts on each piece of prepared pastry on the cookie sheet. Bake 350°F for 40 minutes. As soon as pastry comes out of oven, drizzle with icing.

Step 3. Cool pastry a bit and slice as desired. (Diamond shapes, etc.) Can color icing to a pale pastel green or red for a variation.
