Pumpkin Bars Recipe

An Easy Thanksgiving Recipe To Make

This easy pumpkin bars recipe makes a delicious treat for serving at Thanksgiving. With their rich-and-creamy cream cheese icing, these bars will be a huge hit with family and friends of all ages. Serve them to the family as a treat after a walk in the woods or as an evening snack while watching a movie.

The pumpkin is synonymous with Thanksgiving, and this easy Thanksgiving recipe featuring the delicious flavor of pumpkin will make you poplar with the dessert lovers at your house.



Pumpkin Bars Recipe For Thanksgiving

This recipe for Thanksgiving is adapted from an old recipe previously published.

4 eggs
1-2/3 cups sugar
1 cup vegetable oil
1 (15 ounce) can solid pack pumpkin
2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

In a large mixing bowl beat together eggs, sugar, oil, and pumpkin. Combine the flour, cinnamon, baking powder, baking soda, and salt. Gradually add the combined dry ingredients to the pumpkin mixture and beat together well. Pour your mixture into an ungreased jellyroll pan and bake at 350°F for 27 minutes or until a toothpick comes out clean when inserted. Allow to cool before adding the cream cheese icing.

Recommended Cream Cheese Icing:

1 (3 ounce) package cream cheese, softened
2 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 tablespoon milk

Beat together the cream cheese, sugar, butter, and vanilla extract. Add just enough milk to help get a nice spreading consistency. If desired, you can add a few drops of yellow or orange (red+yellow) food coloring to make them appear more festive in the typical Fall colors.
