Pinto Bean Pie

I am trying to find a pinto bean pie recipe. You make it with pinto beans, and it tastes like a pecan pie. I know you use sugar, eggs, and butter, but I don't know how much of each.

It is a great pie for the holidays, and no one will know the difference unless you tell them.

A pinto bean pie that tastes like a pecan pie. Now that's different! Joyce, I've never seen a recipe for it, but I'd love to as I love pecan pie. Can someone help us out?

This pie tastes like Pecan pie and can be served topped with whipped cream, a non-dairy whipped topping, or a scoop of ice cream:

Idaho's Pinto Bean Pie Recipe

1/2 cup butter
1/2 cup sugar
1 cup brown sugar
2 eggs, beaten
1 heaping cup of mashed Pinto Beans (1 1/2 cups cooked beans)
9-inch unbaked pie shell

Beat butter until creamy; add sugar, brown sugar and beaten eggs, beating well after each addition. Add pinto beans and blend well. Pour into 9-inch, unbaked pie shell.

Bake at 375°F for 20 minutes, then at 350°F for an additional 25 minutes or until inserted knife inserted into the center comes out clean.

Mock Pinto Bean Pie

Use the Karo syrup recipe for Pecan Pie, except instead of pecans, substitute an equal amount of pinto beans. If using the dried beans, soak overnight then rinse 2-3 times. Chop them coarsely. If using canned beans, drain well then rinse well; be sure that if using the canned ones you use the plain ones not the seasoned ones.

I've done this for years and when I tell everyone the "secret" ingredient they can't believe it.
