Pfeffernusse Cookies

I am looking for a Pfeffernusse cookie recipe my mother used to make when I was a kid. She always mixed it in a big kettle on the stove by hand with a wooden spoon because it was so stiff it would either bend a metal spoon or break plastic ones.

It called for 4 cups melted honey, ground cloves, cinnamon and nutmeg. Because the ingredient measurements were so large in the recipe, it started out using 10 cups of flour to mix with the liquid ingredients. There were no eggs in the mix.

You baked the Pfeffernusse cookies on a cookie sheet as a small flat ball with a piece of walnut in the middle. They were soft immediately out of the oven but after cooling, you either had to dunk them in coffee to soften them for eating, or let them age in the cookie tin for 2-3 months so the honey in them would soften, not that the kids ever let them alone that long.

I hope someone can find the recipe. Thanks for the help.

Dee, this old fashioned Pfeffernusse Cookie Recipe appears similar to the recipe you're looking for, except it calls for powdered sugar instead of honey for its sweetener. Most cooking experts say that 1/2 cup of honey can be safely substituted for 1/2 cup of sugar in a recipe, so you could experiment by making these cookies with honey, if you prefer the honey taste. Cookies with honey tend to brown more quickly, so watch closely as they bake.

Pfeffernusse Cookies

Ingredients:

3 eggs
1/2 pound powdered sugar
2 cups flour
1/2 teaspoonful cinnamon
1/4 teaspoonful cloves
1/4 teaspoonful nutmeg
1/2 teaspoonful soda
1/4 teaspoonful salt
1 lemon, juice and rind

Method:

Beat eggs well, gradually add powdered sugar, lemon juice and grated rind. Sift flour and add salt, soda and spices. Sift again and add to egg and sugar mixture. Beat to form smooth, medium-soft dough. Chill in refrigerator for several hours. Roll out on floured board, into long finger-shaped sticks. Cut into small marble sized pieces and bake on greased baking sheets in hot oven (425°F) until they turn a light, golden brown in color.
