Fudge Icing

I need a chocolate cake icing that would crack like fudge once it cooled on the cake. Does anyone have a fudge icing recipe like this?

Opera Caramel Frosting Recipe

This sounds like the old fashioned opera caramel frosting. The longer it's boiled, the harder, more candy-like it will be, but watch that it doesn't get too thick to beat and spread.

1-1/2 cups brown sugar
3/4 cup thin cream
1/2 tablespoon butter

Boil ingredients together until a ball can be formed when mixture is tried in cold water. It takes about forty minutes for boiling. Beat until of right consistency to spread.

I found the following fudge frosting recipes on a Google search. Maybe it will help.

Chocolate Fudge Frosting

3 tablespoons Unsweetened cocoa powder
1 cup Sugar
1/3 cup Evaporated skim milk
3 tablespoons Safflower oil
1/4 teaspoon Salt
1 teaspoon Vanilla

In medium saucepan, combine all ingredients except the vanilla. Bring to a boil, reduce heat and simmer 1 minute. Remove from heat. Add vanilla; beat 5 minutes with electric mixer. Spread over cake and let cool.


Grandma's Chocolate Fudge Icing

2 cups granulated sugar
1/2 cup butter
1/2 cup milk
1 teaspoon vanilla extract
3 squares unsweetened chocolate

Place all ingredients (except vanilla extract) in pan. Stir over low heat. Bring to a full boil for 1 minute; remove from stove and beat by hand until WARM to LUKEWARM (no more than that or it will become too thick). Stir in vanilla extract. Spread on cake and allow to cool (it hardens as it cools). All you have to do is pour the icing over cake, and it should cover the entire cake without using a knife, if it is the right consistency.

If you have any left over, put onto a plate and later you can cut it into little squares and eat as fudge.
