Dessert Recipes For Easter

These Easter dessert recipes are taken from Mom's old recipe scrapbooks, circa 1929.

Easter Chocolate Creme Recipe

A rich-tasting and gorgeous dessert for your family's Easter Dinner dessert.

Separate 4 eggs, at room temperature. Heat 1 package of chocolate chips (6 oz) in pot over hot water until partly melted. Remove pot from hot water; stir chocolate rapidly until entirely melted. Add 1/4 cup light or heavy cream and blend. Add a dash of salt and 1 teaspoon vanilla. Beat egg yolks slightly; then add chocolate mixture. Continue beating until mixture is thick and creamy, about 2 or 3 minutes.

Beat egg whites until foamy throughout; add 2 tablespoons sugar gradually, beating until mixture stands in stiff peaks. Fold chocolate mixture into egg whites until just blended. Pour into small dessert dishes. Chill 3 or 4 hours or overnight.

May top with whipped cream and chocolate sprinkles just before serving. Makes 8 to 10 servings.

Chocolate Caprices Recipe

1 package chocolate chips (6 oz)
3/4 cup sweetened condensed milk
1 cup finely crushed graham wafers
1/2 cup raisins
1/4 cup chopped nuts
1/2 teaspoon vanilla

Heat chocolate chips in a pot over hot water until partly melted. Remove from heat and stir rapidly until entirely melted. Add remaining ingredients. Mix thoroughly. Drop from teaspoon on waxed paper. Cool until firm. Makes about 3 dozen.

Chocolate Roll Recipe

2 egg whites
22 marshmallows, cut fine (or 2 cups miniature marshmallows)
2 ounces unsweetened chocolate, melted
1/3 teaspoon cream of tartar
1 cup sifted confectioners' sugar
1 cup shredded coconut

Beat egg whites until they are stiff and stand up in peaks. Add marshmallows, melted chocolate, cream of tartar and sugar, and mix together well.

Shape chocolate mixture into 2 ten-inch rolls. Roll in shredded coconut. Chill in refrigerator until firm. To serve, cut in 1/4-inch slices. Makes about 2 dozen slices.
