Cottage Cheese/Gelatin Pineapple/Lemon Graham/Butter Crust Pie

by Robert Stockburger
(Santa Maria, CA)

I recall a pie that was a family favorite that my mother used to make when I was in early grade school in the early 1950's. She would form a Graham Cracker/butter crust in a pie pan, pour in a mixture of plain Knox gelatin/cottage cheese and I think drained crushed pineapple or lemon juice for flavoring, then refrigerate until set.

I regret not paying closer attention to her preparation methods, but an eight-year-old boy has baseball on his mind, and the pie eating later. If anyone can recall anything similar to the afore mentioned and has a precise pie recipe to share, we would all sincerely appreciate it!

Thank You,

Robert Stockburger,
