Coeur a la Creme Recipe With Strawberries

Berenice Korshet At Menlo Park

I recently found this Coeur a la Creme recipe that was a favorite dessert of a relative of mine, Berenice Harley Korshet. She lived in San Francisco, was a freelance reporter, and loved to cook!

Ingredients:

1 pint small curd cottage cheese
1 6 ounce package Philadelphia cream cheese
1 teaspoon powdered sugar
1/8 teaspoon almond extract
1 teaspoon vanilla
1 cup commercial sour cream

Method:

Press cottage cheese through a wire strainer and blend thoroughly with softened cream cheese. Add sour cream. Add sugar, almond extract, and vanilla. Beat thoroughly. Pack mixture into a cheese-cloth lined heart shaped coeur a la creme mold (preferably wicker). Refrigerate for at least 2 hours. Unmold on a small platter or cake dish, surround with sugared strawberries.

The Korshets

Maureen (and Melissa), I would love to hear from you about the Korshets! I am researching an article related to their house in SF - my parents were friends of theirs in the 60s/70s. I'm also trying to track down a copy of "Cable Car Cookery" that BK wrote.

Heather, I've discovered that the book "Cable Car Cookery: A Culinary Cavalcade of The City That Knows How" was self published by Berenice Harley Korshet. The U.S. Library of Congress catalog of copyright entries records it Copyright by Berenice Harley, 5Dec57, A311964. Hopefully, a family member might still have a copy for you.
